Tastes Like Summer!

I love food and I love sharing food that I love...that is a lot of love....I know.

Recently Ryan and I took the baby to Ryan's fathers house/farm. My son has such a blast out there every time. Chickens, ducks, turkeys and lots of land. Ryan's step-mom always has great get together's that are usually themed. This time was Greek night. They cooked lamb and had pita bread. It was all delicious but there was one item that just knocked my socks off.

Tzatziki, which is also sometimes called Cucumber dip. This recipe is the best I have had in a long time. Way better than any store bought stuff. It can be used as a dip or spread. I really preferred to just spread it on the warm pita bread. It tastes so fresh and light you can't believe it is so good! I was pretty close to spoon feeding into my mouth.

Tzatziki-Cucumber yogurt dip

I've made this dip before to go with grilled lamb. This recipe from is superior to any other recipe I've tried. Tastes like summer!

3 tbsp olive oil
1 tbsp vinegar
1 cup plain non-fat Greek yogurt
1 cup low-fat sour cream
2 cloves garlic minced
1/2 tsp salt
1/4 tsp white pepper
2 cucumbers peeled and grated
1 tsp fresh dill

Whisk the first 7 ingredients together. Fold in the cucumbers and the dill.
Refrigerate for several hours before serving. Serve with pita chips.
